My husband Jake created this amazing and quick recipe based off the mince chickpea korma recipe I have and it is DELISH. It’s quick and a nice way to enjoy a mince dish to mix it up.
Jakes Korma Curry Stir Fry

Ingredients
- 500 g Beef or Turkey Mince
- 1 brown onion diced
- 1 Can of Chickpeas Drained and Rinsed
- 1/3 cup Korma Curry Paste
- 1 tsp minced garlic
- 400 ml can Coconut Milk
- 1/2 Cup Zucchini sliced
- 4 Cups of Kale Shredded
- Thin Rice noodles vermicilli
- Coriander or mint to serve.
Instructions
- Heat large fry pan and cook mince and onion in a little olive oil.
- Chop veggies then add to fry pan with coconut milk.
- Meanwhile place rice noodles in a separate boil, boil the jug and pour hot water over rice noodles. They will soften in a couple minutes, drain and add to fry pan.
- Let simmer until veggies are softened.
- Top with coriander.
