This is a great budget friendly way to get a serving of omega 3’s from wild caught salmon (fresh salmon in Australia is farmed – not ideal). They taste amazing and are kid friendly so a good family meal you an whip together with minimal ingredients.

Easy Gluten Free Salmon Patties

Ingredients
- 1 potato grated
- 1 small zucchini grated
- 1 small stalk of celery diced
- 1 400 g tin wild salmon
- 1 clove of garlic minced
- 3 TBS coconut flour
- 1 cup Almond Meal or GF flour
- 1 Large Egg
- Handful of fresh herbs coriander, parley or dill
- Olive oil for cooking
Instructions
- Grate potato and zucchini, wrap up in a tea towel and squeeze out excess moisture over sink.
- Drain salmon, dice celery and add all ingredients to bowl combining well. Form into patties (add a little more flour if needed).
- Heat a fry pan on med-high heat, add olive oil and cook patties 3-4 minutes each side or until golden and firm.
