Meal prep for healthy lunches

Stuck for healthy lunch ideas? Feel like you’ve got a fridge full of food, but nothing actually to eat? 

If you want a simple meal prep that actually helps you make a healthy lunch or a grab and go snack, I’ve got the answer for you…

a fridge FILLER.

A one tray bake, roast veggies – anything that helps you open your fridge and see exactly how you can create a 2 minute meal.

This has been so helpful for us to not only always have a healthy grab and go option in the fridge, but also helps to take the thinking out of what to actually eat!

 

Here are 2 filler recipes for a healthy lunch meal prep

 
Mix them with salads, chuck them on a wrap or even a bit of toast in the morning!

Massaman Veggie Bake

A delicious side or 'fridge filler' for quick salads, wraps or with leftovers.
Cook Time50 minutes

Ingredients

  • 2 Cups Diced Sweet Potato
  • 2 Cups Diced Pumpkin
  • 1 Cup Green Beans or zucchini
  • 2 Carrots
  • 1 onion
  • 4 TBS Massaman Curry Paste
  • 1 Can Full Fat Coconut Milk

Instructions

  • Preheat oven to 200C
  • Dice Veggies and add to lightly greased baking dish
  • Mix all ingredients well then cover with foil and bake for 40minutes. Remove foil and cook for another 10mins.
  • Store in an airtight container in the fridge for up to 4 days.

Morroccan Spiced Veggies + Chickpeas

5 mins to prep this simple and delicious salad filler or side dish. High in anti-inflammatory nutrients and turmeric, it's a quick way to supercharge your meal.
Prep Time5 minutes
Cook Time30 minutes
Servings: 3 serves

Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 cups cauliflower
  • 3-4 cups mixed sweet potato, pumpkin and carrots

Spice/Flavour

  • 1 tablespoon of olive oil
  • 1 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp cinnamon
  • 1/2 tsp paprika
  • 1 tsp maple syrup
  • 1 TBS tamari or soy sauce
  • pinch of salt

Instructions

  • Preheat oven to 200 and line a baking tray
  • Rinse chickpeas well and dry with clean tea towl
  • Chop cauliflower into medium sized pieces and dice potato and pumpkin
  • Mix all spice/sauce ingredients together then combine with veggies in a bowl until well coated
  • Pour onto baking tray and roast for around 30mins or until cooked and crispy (you can give the pan a shake halfway through) keep an eye on the cauliflower.
