Vegetable 'anything goes' Frittata
Whatever veggies you have in the fridge, throw them in a frittata! It's a great way to salvage unused veggies while creating an incredibly nourishing (and easy!) meal.

Servings: 4 serves
- 1 cup sweet potato or pumpkin chopped into small cubes
- 1 cup spinach
- 1 onion diced
- 2 tablespoons dried italian mixed herbs
- 1 small zucchini chopped
- 8- 10 eggs
- 2 TBS nutritional yeast (dairy free) or goats cheese (dairy)
Pre-heat oven to 180°
Mix all ingredients in a bowl (or pour straight into the baking dish!)
Pour into a lined or greased rectangular dish.
Bake for 40 minutes or until cooked.
