Vegetable 'anything goes' Frittata

Whatever veggies you have in the fridge, throw them in a frittata! It's a great way to salvage unused veggies while creating an incredibly nourishing (and easy!) meal.

Servings: 4 serves

Ingredients

  • 1 cup sweet potato or pumpkin chopped into small cubes
  • 1 cup spinach
  • 1 onion diced
  • 2 tablespoons dried italian mixed herbs
  • 1 small zucchini chopped
  • 8- 10 eggs
  • 2 TBS nutritional yeast (dairy free) or goats cheese (dairy)

Instructions

  • Pre-heat oven to 180°
  • Mix all ingredients in a bowl (or pour straight into the baking dish!)
  • Pour into a lined or greased rectangular dish.
  • Bake for 40 minutes or until cooked.
