Slow Cooker Beef Stroganoff
A super easy and healthy version of beef stroganoff that is gluten and dairy free.
Servings: 4
- 600 g Grassfed Beef Steak
- 1 cup of stock
- 3 large carrots
- 2 brown onions
- 4 potatoes
- 4 cups baby spinach
- 2 TBS Worcestershire sauce
- 2 TBS tomato paste
- 1 stalk of celery
- 1 cup mushrooms
- 2 TBS almond meal or GF flour
- 2-3 cloves of garlic
DF Sour Cream
- 2 TBS Coconut Cream + 1 Tsp lemon juice
Roughly slice beef, carrots, celery, mushrooms and potato into smaller pieces and thinly slice the onions and garlic.
Add all ingredients except spinach and DF 'sour cream' to a slow cooker, mix well to combine and cook on low for 8hrs or 4hrs on high.
Stir through DF 'sour cream' and spinach just before serving.
