Slow Cooker Beef Stroganoff

A super easy and healthy version of beef stroganoff that is gluten and dairy free.

Ingredients

  • 600 g Grassfed Beef Steak
  • 1 cup of stock
  • 3 large carrots
  • 2 brown onions
  • 4 potatoes
  • 4 cups baby spinach
  • 2 TBS Worcestershire sauce
  • 2 TBS tomato paste
  • 1 stalk of celery
  • 1 cup mushrooms
  • 2 TBS almond meal or GF flour
  • 2-3 cloves of garlic

DF Sour Cream

  • 2 TBS Coconut Cream + 1 Tsp lemon juice

Instructions

  • Roughly slice beef, carrots, celery, mushrooms and potato into smaller pieces and thinly slice the onions and garlic.
  • Add all ingredients except spinach and DF 'sour cream' to a slow cooker, mix well to combine and cook on low for 8hrs or 4hrs on high.
  • Stir through DF 'sour cream' and spinach just before serving.
