Simple Quinoa Salad
A fresh and summery quinoa salad that goes well with any main dish.

- 1 bunch flat leaf parlsey finely chopped
- 2 cups uncooked quinoa
- 1 cup cherry tomatoes
- spinach leaves
Dressing
- juice from 1 lemon about 1/4 cup
- 1 TBS tamari
- 1 tsp honey or maple syrup
Wash and Cook Quinoa
Mix dressing ingredients in a small bowl
Chop parsley and cherry tomatoes
Let quinoa slightly cool then stir all ingredients together.
Serve with Avocado and extra parsley.
