Quinoa Hemp Salad

An easy summery main with Hemp seeds, loaded with nutrients and a great addition to salads to pump up the protein and and omega 3’s – essential for the health of our brain, heart, immune system, mood and reducing inflammation (just to name a few!). 
Servings: 2 serves

Ingredients

  • 2 cups cooked quinoa
  • 1 cup cucumber
  • 1 cup cherry tomatoes halved
  • 2 cups spinach
  • 1 bunch parsley roughly chopped
  • 1/4 cup hemp seeds

Dressing

  • 1 tbs tamari
  • 1 tsp stevia
  • 1 clove garlic finely chopped
  • 1-2 TBS lemon juice

Instructions

  • Mix all together in a bowl and top with Avocado if you like!
