Potato Swede Bacon Bake
The ultimate comfort food but good for you! Dairy and Gluten free, this potato bake is packed with veggies, fibre and
- 3 medium brown potatoes
- 1 medium sweet potato
- 2 medium swede
- 1 onion diced
- 1/2 tsp dried thyme
- 1/2 tsp garlic powder
- 1 can full fat coconut milk* make sure it's good quality.
- 200 grams bacon diced
Preheat oven to 180°C and lighty grease a baking dish.
Brown the diced bacon and onion in a lightly oiled pan then add coconut milk and bring to the boil (a couple mins).
Meanwhile cut potatoes and swede into thin slices (using a mandolin is quickesand layer half of the veggies in the baking dish.
Pour half of the coconut milk/bacon mixture over veggies in dish. Layer the rest of the veggies and pour remaining mixture on top.
Bake in oven 50 minutes.
