Ingredients

  • 3 medium brown potatoes
  • 1 medium sweet potato
  • 2 medium swede
  • 1 onion diced
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1 can full fat coconut milk* make sure it's good quality.
  • 200 grams bacon diced

Instructions

  • Preheat oven to 180°C and lighty grease a baking dish.
  • Brown the diced bacon and onion in a lightly oiled pan then add coconut milk and bring to the boil (a couple mins).
  • Meanwhile cut potatoes and swede into thin slices (using a mandolin is quickesand layer half of the veggies in the baking dish.
  • Pour half of the coconut milk/bacon mixture over veggies in dish. Layer the rest of the veggies and pour remaining mixture on top.
  • Bake in oven 50 minutes.
