Massaman Veggie Bake
A delicious side or 'fridge filler' for quick salads, wraps or with leftovers.
- 2 Cups Diced Sweet Potato
- 2 Cups Diced Pumpkin
- 1 Cup Green Beans or zucchini
- 2 Carrots
- 1 onion
- 4 TBS Massaman Curry Paste
- 1 Can Full Fat Coconut Milk
Preheat oven to 200C
Dice Veggies and add to lightly greased baking dish
Mix all ingredients well then cover with foil and bake for 40minutes. Remove foil and cook for another 10mins.
Store in an airtight container in the fridge for up to 4 days.
