Mango Eggs 2 ways
Perfect for relieving constipation or keeping bowel movements regular and a well balanced meal of healthy fats, protein and carbohydrates. A good source of iron, fiber and brain building B's. Great fo BLW or you can leave it as a chunky puree and spoon feed your bubby
- 1 mango
- 2 egg yolks
- 1 tsp ghee or coconut oil
Option 1: Mango Egg-Cake
puree mango or mash, separate egg yolks from whites and mix together with mango.
Heat a fry pan on med heat, add a generous amount coconut oil or ghee and pour in mixture.
Heat for 2-3 minutes then gently flip and heat another 2 minutes. It's very mushy (a lot like scrambled eggs)
Option 2: Mango Soft Eggs
puree mango or mash, separate egg yolks from whites and mix together with mango.
Heat a small saucepan on med heat, add a generous amount coconut oil or ghee and pour in mixture gently stirring until warm.
