Immune Tonic Soup

Servings: 4 serves
- 1 tablespoon olive oil
- 1 onion
- 1 zucchini
- 3 cups spinach
- 1 cup of broccoli
- 3 cups of pumpkin
- 1 large potato
- 1 cup frozen peas
- 3-6 cloves garlic minced
- 500 ml High quality broth or stick a few organic chicken drumsticks in there with skin on.
- 1.5 litre of water
- 2 tsp turmeric
- 1 tbs ground ginger
- 1 bunch of parsley
Roughly chop all vegetables.
In the bottom of your saucepan (medium-large) lightly cook the garlic and onion in olive oil for a few minutes.
Add all other ingredients and liquid.
Bring to the boil then turn on low and simmer for at least 20minutes. The vegetables will soften into a mush and don't require blending unless you like it super smooth.
