Immune Tonic Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion
  • 1 zucchini
  • 3 cups spinach
  • 1 cup of broccoli
  • 3 cups of pumpkin
  • 1 large potato
  • 1 cup frozen peas
  • 3-6 cloves garlic minced
  • 500 ml High quality broth or stick a few organic chicken drumsticks in there with skin on.
  • 1.5 litre of water
  • 2 tsp turmeric
  • 1 tbs ground ginger
  • 1 bunch of parsley

Instructions

  • Roughly chop all vegetables.
  • In the bottom of your saucepan (medium-large) lightly cook the garlic and onion in olive oil for a few minutes.
  • Add all other ingredients and liquid.
  • Bring to the boil then turn on low and simmer for at least 20minutes. The vegetables will soften into a mush and don't require blending unless you like it super smooth.
