Healthy Sesame Chicken Stir Fry

Servings: 4 serves
- 500 grams chicken breast
- 100 g baby spinach or kale
- 1 tablespoon coconut or olive oil
- 2 tbspoons almond meal
- 1.5 cup of brown rice
Sauce Ingredients
- ¼ tsp ground ginger
- ¼ tsp garlic powder
- 1 tablespoon sesame oil
- 2 tablespoons honey
- 3 tablespoons tamari
- 2 tablespoons sesame seeds
If having rice, wash rice and put in a saucepan to cook.
Cut chicken into small pieces and rub with almond meal (or cornstarch).
Heat a large pan over high heat, add oil and chicken and stir fry chicken for a few minutes until cooked through. While that's cooking mix sauce ingredients in a small bowl.
Once chicken is cooked, turn pan down on low, pour in the sauce and let the sauce simmer for a couple of minutes until it thickens.
Stir through spinach at the end to slightly wilt and serve with rice and extra sesame seeds.
