Gluten Free Choc Chunk Cookies

Ingredients

  • 3 Tablespoons coconut oil
  • 1 Cup Almond Meal
  • ¼ cup ground pumpkin and hemp seeds or extra almond meal
  • 2 squares 85% dark choc chopped
  • 2 Tablespoons 100% Maple Syrup
  • 2 Tablespoons Pea Protein Powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder + squeeze of lemon or dash apple cider vinegar.

Instructions

Pre-heat oven to 160°

    Mix all ingredients in a bowl

      Roll into small balls and bake for 10-15mins (they’ll be slightly golden on edges).

      • Let cool for before digging in and store in an airtight container 2-3 days.
