Preheat oven to 200°C and lightly grease a baking dish.
Peel and wash potatoes then slice in half, lengthways
Place 1 potato half, cut-side down, on a chopping board and cut thin slices in top of potato 1cm apart, being careful not to cut the whole way through potato. (You can slide a bamboo skewer through the bottom to prevent you cutting through).
Repeat with remaining potato halves and place flat side of potato in baking tray
Mix together coconut milk and dry herbs and pour over potatoes.
Sprinkle diced bacon, rosemary springs and nutritional yeast.
Cover with foil and bake for 40mins then uncover and bake another 30 mins until potato is golden (may need longer depending on size of your potatoes)
Serve with Leafy Greens or Steam a large head of Brocolli to serve with it.
