Dairy and Gluten Free Chicken Pasta Bake w Sun-dried Tomatoes

The BEST weeknight dinner every mama needs! Gluten and dairy free, super creamy and only 5 minutes to throw together.

Ingredients

  • 1/2 tsp garlic powder
  • 1 TBS Italian herbs
  • 2 cups dry penne or spiral GF pasta
  • 1 cup canned coconut milk
  • 1 400 g tin tomatoes
  • 1/3 cup sun-dried tomatoes
  • 1 cup bone broth or stock
  • 1/4 cup nutritional yeast + extra for sprinkling on top
  • 1 large Chicken Breast

Instructions

  • Preheat oven to 180C
  • Lightly spray baking dish. Dice chicken into bite sized pieces. Pour in all ingredients, mixing well until combined. Push down so that pasta is completely submerged by the liquid.
  • Cover with foil and bake for 20minutes.
  • Uncover, stir everything and sprinkle nutritional yeast on top. Return back to oven (uncovered) for another 10 minutes.
  • It will firm up a little as it cools but it is quite 'saucy'. If still very liquid, return to oven uncovered for another 5mins.
