Dairy and Gluten Free Chicken Pasta Bake w Sun-dried Tomatoes

Servings: 4 serves
- 1/2 tsp garlic powder
- 1 TBS Italian herbs
- 2 cups dry penne or spiral GF pasta
- 1 cup canned coconut milk
- 1 400 g tin tomatoes
- 1/3 cup sun-dried tomatoes
- 1 cup bone broth or stock
- 1/4 cup nutritional yeast + extra for sprinkling on top
- 1 large Chicken Breast
Preheat oven to 180C
Lightly spray baking dish. Dice chicken into bite sized pieces. Pour in all ingredients, mixing well until combined. Push down so that pasta is completely submerged by the liquid.
Cover with foil and bake for 20minutes.
Uncover, stir everything and sprinkle nutritional yeast on top. Return back to oven (uncovered) for another 10 minutes.
It will firm up a little as it cools but it is quite 'saucy'. If still very liquid, return to oven uncovered for another 5mins.
