Coconut Passionfruit Bars

A delicious, creamy and fresh dessert that is super easy to make.
Servings: 12 Bars/Slices

Ingredients

BASE

  • 1 cup almond meal
  • ½ cup desiccated coconut
  • 3 TBS coconut oil
  • 1 TBS honey

COCONUT FILLING

  • 400ml can coconut cream (good quality brand like Ayam)
  • 1 tsp vanilla
  • 2 TBS Honey or Stevia
  • 2 TBS coconut oil

TOP

  • 6 Passionfruit

Instructions

  • Make the base by mixing ingredients together with your hands until it sticks together. Press into a loaf pan lined with baking paper. Put in freezer.
  • Mix the coconut filling ingredients in a bowl until well combined. Pour on top of the base and return to freezer.
  • Empty passionfruit into a bowl and give a light stir. When coconut filling is slightly firm, pour passionfruit on top and return to freezer to set for 1 hour.
  • Store in the freezer and take out 10 minutes before serving
