Coconut Passionfruit Bars
A delicious, creamy and fresh dessert that is super easy to make.
Servings: 12 Bars/Slices
BASE
- 1 cup almond meal
- ½ cup desiccated coconut
- 3 TBS coconut oil
- 1 TBS honey
COCONUT FILLING
- 400ml can coconut cream (good quality brand like Ayam)
- 1 tsp vanilla
- 2 TBS Honey or Stevia
- 2 TBS coconut oil
Make the base by mixing ingredients together with your hands until it sticks together. Press into a loaf pan lined with baking paper. Put in freezer.
Mix the coconut filling ingredients in a bowl until well combined. Pour on top of the base and return to freezer.
Empty passionfruit into a bowl and give a light stir. When coconut filling is slightly firm, pour passionfruit on top and return to freezer to set for 1 hour.
Store in the freezer and take out 10 minutes before serving
