Preheat oven to 180°C and set up a tray with a wire rack on top.
In one bowl whisk eggs with coconut flour and in another bowl mix coconut, garlic and paprika. Slice turkey breast into strips.
Dip turkey in egg and coconut mix first then coat in coconut mix and add to wire rack. Bake in oven for approx 20minutes until golden.
Meanwhile wash and put quinoa on to cook. Once cooked stir through tamari. Mix Dressing in a small bowl and layer quinoa, salad, turkey and dressing on top of a lettuce leaf. (you can roll up like a wrap)
