Chocolate Beetroot Muffins
A delicious gluten, dairy and refined sugar free chocolate muffin that is the perfect fix to your chocolate cravings (without the sugar crash). The beetroot adds natural sweetness, antioxidants and a serve of veggies!

Ingredients

grated beetroot

almond meal⠀

vanilla extract⠀

coconut flour⠀

baking powder

cacao or cocoa⠀

tablespoons
coconut oil ⠀

cup
almond milk

Honey, Maple Syrup, coconut sugar etc
or your choice of unrefined sweetener

dark choc chips (dairy free)
Instructions
Preheat oven to 180° C.
Grate beetroot and add all ingredients to a bowl, stirring well to combine.
Pour into lined muffin tin and bake for 20 minutes or until a toothpick comes out clean.
Notes
TIP: As soon as they're cool, wrap individually and freeze in airtight container.
