Chicken Burrito Bowl

A healthy burrito bowl ready in 15minutes. Easy to prepare and customize, this is a family favourite.

Ingredients

  • 2 Large Chicken Breasts
  • 1/4 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 can black beans
  • 1 red onion
  • 1 small red capsicum
  • Tomatoes
  • lettuce or spinach
  • 1-2 Avocados
  • Fresh corn
  • Fresh Coriander
  • 1 lemon or lime cut into wedges
  • 1 cup brown basmati rice
  • olive oil for cooking

Instructions

  • Wash rice and put on to cook.
  • Meanwhile, slice chicken into 4 pieces & coat with cumin, garlic & onion powder.
  • Heat a large fry pan on high, lightly spray with olive oil and cook chicken 3-4 minutes each side or until cooked.
  • While chicken is cooking, chop up vegetables, rinse and drain black beans.
  • Arrange all ingredients in a bowl, add coriander, squeeze with lemon/lime and a pinch of salt and pepper.
