Chicken Burrito Bowl
A healthy burrito bowl ready in 15minutes. Easy to prepare and customize, this is a family favourite.

- 2 Large Chicken Breasts
- 1/4 tsp ground cumin
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 can black beans
- 1 red onion
- 1 small red capsicum
- Tomatoes
- lettuce or spinach
- 1-2 Avocados
- Fresh corn
- Fresh Coriander
- 1 lemon or lime cut into wedges
- 1 cup brown basmati rice
- olive oil for cooking
Wash rice and put on to cook.
Meanwhile, slice chicken into 4 pieces & coat with cumin, garlic & onion powder.
Heat a large fry pan on high, lightly spray with olive oil and cook chicken 3-4 minutes each side or until cooked.
While chicken is cooking, chop up vegetables, rinse and drain black beans.
Arrange all ingredients in a bowl, add coriander, squeeze with lemon/lime and a pinch of salt and pepper.
