4 Bean Breaky Bowl w Avo
A super simple pantry meal that comes together in 5 minutes! Store in an airtight container in the fridge for a few days worth of easy breakfasts or meals.
- 400 g tinned crushed tomatoes
- 400 g tinned black beans
- 400 g tinned kidney beans
- 400 g tinned butter beans
- 400 g tinned cannellini beans
- 2 TBS tomato paste
- 1 onion diced
- 1 tsp ground cumin
- 2 cloves garlic minced
- 1/2 cup water bone broth or stock.
- 1 TBS olive oil
- Salt to season.
- 1/4 Avo per person.
Heat a medium saucepan on high, add olive oil, onion and garlic, cooking a couple minutes until onion is soft.
Add rest of ingredients and stir until well combined and hot. Season with salt and serve with Avo.
Extra serving suggestions: GF toast, rice or eggs.
