Sweet Potato and Feta Frittata

Another easy and delicious way to get a healthy meal on the table. This frittata works perfectly for any meal, especially when made ahead and eaten on the go!

Sweet Potato and Feta Frittata

A quick, easy and portable dish for any time of day! serve with a small side salad and you've got a healthy and filling dish to go.

Ingredients

  • 10 eggs
  • 1 onion diced
  • 1 TBS dried mixed herbs
  • 2 cups sweet potato
  • 2 cups of spinach
  • 50 g goats cheese/ organic feta

Or Dairy Free Option

  • 1/4 cup nutritional yeast

Instructions

  • Preheat oven to 180°C
  • Cut veggies into small pieces and add all ingredients to a lightly greased baking dish, whisking until combined.
  • Bake in the oven for 40-50 minutes or until firm and cook

Notes

Serve with a fresh salad of leafy greens, tomatoes, avocado slices and lemon juice.
Store in an airtight container in fridge for 3 days or freeze.
