Roasted Veg and Honey Macadamia Seed Salad

This salad is always a hit and is a great example of how you can up your salad game with minimal effort. Can be made for two as a main or as a delicious side salad.

Roasted Veg and Honey Macadamia Seed Salad

The tastiest salad that will have everyone asking for more! Perfect as a side dish or as a tasty lunch.

Servings: 2 people

Ingredients

  • 1 medium white potato
  • 1 small sweet potato
  • 1 tsp coconut oil to coat potaotes
  • 1 tsp flaxseed oil
  • squeeze of lemon
  • 2-4 cups mixed greens (kale spinach etc)

Macadamia and Seed Mix

  • 1/4 cup macadamias
  • 1 TBS sunflower seeds
  • 2 tsp honey
  • 1 tsp coconut oil

Instructions

  • Preheat oven to 190 C
  • Chop potatoes into small cubes, coat with coconut oil and bake for 20mins (depending on size)
  • While they’re baking heat a pan to medium heat and add coconut oil, 1tsp honey and coat macadamias and seeds. Stir for a couple minutes until nuts are lightly toasted.
  • Put mixed leaves in a bowl, dress with lemon and flaxseed oil. Mix in potatoes and nuts.
