For a quick and easy dinner prep you can’t go past a one dish frittata!

You can be flexible with the flavours and veggies you add to it and it only takes less than 10 minutes to throw together!

This one is lovely with a bit of goats cheese or feta, or you can sub for nutritional yeast. 

 

*Also use a neutral tasting almond milk that hasn’t been sweetened. 

Italian Flavour Frittata

This frittata is packed with flavour, protein, veggies - everything you need for a well-balanced and satisfying meal. Store in an airtight container in the fridge for up to 4 days and enjoy as a a ready to go meal anytime.

Ingredients

  • 8-10 Eggs
  • 50 grams sundried tomatoes
  • 2 TBS Mixed Italian Herbs
  • 1 Large Zucchini
  • 1 Onion
  • 1 Cup of Baby Spinach
  • 1 punnet cherry tomatoes
  • 1/3 cup unsweetened almond milk
  • 1/4 cup shredded hard goats cheese or sub for feta or nutritional yeast (DF Option)

Instructions

  • Preheat oven to 200C
  • Dice onion and roughly chop zucchini and baby spinach and add all ingredients to a lightly greased baking dish.
  • Bake for 45-50minutes.
