Ok this no bake gluten free chocolate slice has to be the easiest snack or dessert option ever! I actually love this as a healthy postpartum snack and for mums in general because it is rich in minerals we need in those early years – magnesium, zinc, calcium and potassium.
It tastes absolutely delicious, is free from gluten, dairy, nuts and sweetened with dates (which are a great source of minerals, antioxidants and natural sweetness) unlike regular chocolate slices loaded with energy draining refined sugar and gluten.
You can whip it together in 5 minutes then into the freezer for a few minutes to harden up.
Keep them stored in the freezer in an airtight container for a nutritious snack that keep cravings at bay (and little bellies happy).
No Bake 5 minute Gluten Free Chocolate Slice
Ingredients
- 1 cup desiccated coconut plus extra for topping
- 1/4 Cup cocoa
- 1 Cup sunflower seeds
- 1 cup medijool dates (pits removed)
- 1/2 cup oats (nut free) or almond meal (GF) or extra coconut!
- 1.5 TBS coconut oil
- 1 tsp vanilla extract
- 2 tsp honey optional
Instructions
- If you have a food processer you can chuck all the ingredients in. If using a high speed blender (nutribullet etc), pulse sunflower seeds and oats to a fine meal, chop dates into small pieces and mash with a fork and then mix all ingredients together in a bowl. Use your hands to mix all ingredients together to form a doughy mixture.
- Press into a lined tray, sprinkle with extra desiccated coconut and pop in the freezer to firm up (about 15mins).
