This recipe will not disappoint! It is creamy and delicious but suprisingly light and fresh served with kale instead of rice. ( I know it sounds weird but everyone LOVES it and it’s a great way to get your greens in 🙂

Mince and Chickpea Korma Curry
A hearty but light and delicious curry with amazing flavours! Gluten and dairy free.

Servings: 4 serves
Ingredients
- 500 g Beef or Turkey Mince
- 1 brown onion diced
- 1 Can of Chickpeas Drained and Rinsed
- 1/3 cup Korma Curry Paste
- 1 tsp minced garlic
- 1/4 tsp ground ginger
- 240 ml Coconut Milk
- 1/2 Cup Zucchini sliced
- 1/2 Cup Pumpkin diced
- 4 Cups of Kale Shredded
- Coriander or mint to serve.
Instructions
- Heat a large pan on medium/high heat and add a touch of olive oil, ginger, garlic, curry paste and onion, stirring a couple of minutes.
- Add mince, breaking apart and stir until cooked.
- Add coconut milk, pumpkin, zucchini and chickpeas, turn on low and cover with lid to allow veggies to soften.
- Mix Kale through just before serving. Top with coriander or mint.
