Mango Eggs 2 Ways | Gluten Dairy Free Baby Breakfast

This is one my favourite recipes for baby Olive, it’s got all the essential nutrients growing babies need and she inhales it! 

You can make it 2 different ways so depending on whether you’re doing baby led weaning, purees or a combo of both (like me) you’ll be able to get these beautiful nutrients into your bub. 

It doesn’t hold together like the baby banana pancake it’s really mushy. I sometimes like to add a sprinkle of hemp seeds in there for the extra mineral and omega boost! 

What’s great about it:

Egg Yolk: the yolks are a powerhouse of nutrients including choline which is essential for babies healthy brain development. They’re also a great source of absorbable iron,  b vitamins, vitamin A and D! 

Mango: Rich in vitamin C which helps with the uptake and absorption of iron, a great source of fibre to keep the digestive system running smoothly and one of the best foods for constipation. Also high in antioxidants, and a source of magnesium and potassium. 

Ghee (optional): Ghee is like clarified butter but it’s a lactose and casein free form of dairy so easy on digestion, it’s anti-inflammatory, a source of MCT’s for brain health and energy. It’s also great source of Vitamin A and D which are essential for babies immune function. 

or 

Coconut Oil: A completely dairy free option, rich in essential fatty acids and minerals and great for digestion.

 

These recipes are suitable for babies 6-7months+ after egg yolk has been successfully introduced on it’s own. You could use the whole egg after 9months (or whenever you feel comfortable introducing the whites.)

Mango Eggs 2 ways

Perfect for relieving constipation or keeping bowel movements regular and a well balanced meal of healthy fats, protein and carbohydrates. A good source of iron, fiber and brain building B's. Great fo BLW or you can leave it as a chunky puree and spoon feed your bubby

Ingredients

  • 1 mango
  • 2 egg yolks
  • 1 tsp ghee or coconut oil

Instructions

Option 1: Mango Egg-Cake

  • puree mango or mash, separate egg yolks from whites and mix together with mango.
  • Heat a fry pan on med heat, add a generous amount coconut oil or ghee and pour in mixture.
  • Heat for 2-3 minutes then gently flip and heat another 2 minutes. It's very mushy (a lot like scrambled eggs)

Option 2: Mango Soft Eggs

  • puree mango or mash, separate egg yolks from whites and mix together with mango.
  • Heat a small saucepan on med heat, add a generous amount coconut oil or ghee and pour in mixture gently stirring until warm.
