A healthy family favourite that also makes great leftovers (if there’s any left!). 5 minutes to prep then go put your feet up while it bakes for 25-30mins.
Honey Mustard One Tray Bake
- 2 Large Chicken Breasts
- 2 cups sweet potato
- 1 medium zucchini.
- 4 cups of spinach
- 2 Tablespoons extra virgin olive oil 2 tbsp Dijon mustard
- 2 tbsp honey
- 1 tsp garlic powder
- Line or tray and Preheat oven to 180 degrees.
- Chop sweet potato and zucchini into 50c sized pieces and add to tray and lightly spray with olive oil.
- Slice chicken breasts in half (or use 4 smaller sized) and add to the tray.
- Mix olive oil, mustard, honey and garlic in a bowl and pour over the chicken.
- Bake for 25-30minutes. Remove tray from oven and pour spinach leaves on top and let them slightly wilt from the heat.
