Honey Mustard Chicken One Tray Bake

A healthy family favourite that also makes great leftovers (if there’s any left!). 5 minutes to prep then go put your feet up while it bakes for 25-30mins.

Honey Mustard One Tray Bake

  • 2 Large Chicken Breasts
  • 2 cups sweet potato
  • 1 medium zucchini.
  • 4 cups of spinach
  • 2 Tablespoons extra virgin olive oil 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tsp garlic powder
  1. Line or tray and Preheat oven to 180 degrees.
  2. Chop sweet potato and zucchini into 50c sized pieces and add to tray and lightly spray with olive oil.
  3. Slice chicken breasts in half (or use 4 smaller sized) and add to the tray.
  4. Mix olive oil, mustard, honey and garlic in a bowl and pour over the chicken.
  5. Bake for 25-30minutes. Remove tray from oven and pour spinach leaves on top and let them slightly wilt from the heat.
