Healthy Sesame Chicken Stir Fry

A super yummy sesame chicken stir fry ready in just 15minutes! A great meal for lunch leftovers.
- 500 grams chicken breast cut into ½ inch strips
- 100 g baby spinach or kale
- 1 tablespoon coconut (or olive oil)
- 2 tbspoons almond meal
Sauce Ingredients
- ¼ tsp ground ginger
- ¼ tsp garlic powder
- 1 tablespoon sesame oil
- 2 tablespoons honey
- 3 tablespoons tamari
- 2 tablespoons sesame seeds
- 1 cup of brown rice
- If having rice, wash rice and put in a saucepan to cook.
- Cut chicken into ½ inch cubes and rub with almond meal (or cornstarch).
- Heat a large pan over high heat, add oil and chicken and stir fry chicken for a few minutes until cooked through. While that’s cooking mix sauce ingredients in a small bowl.
- Once chicken is cooked, turn pan down on low, pour in the sauce and let the sauce simmer for a couple of minutes until it thickens.
- Stir through spinach at the end to slightly wilt and serve with rice and extra sesame seeds.
