If you’re in the mood for a quick and healthier dessert, this gluten and dairy free chocolate peppermint slice is a must-try! No bake and with simple ingredients you likely already have on hand. 

Chocolate Peppermint Slice

A very simple and delicious take on the chocolate peppermint slice. Gluten, Dairy and Low Sugar.

Servings: 12 squares

Ingredients

BASE

  • 1 Cup Almond Meal
  • 2 TBS Nut Butter
  • 1 TBS Honey/Maple Syrup
  • 1/4 cup desiccated coconut
  • 1/4 cup cocao/cocoa

PEPPERMINT FILLING

  • 1.5 Cups Cashews
  • 1 Cup Coconut Cream
  • 3 TBS honey/maple syrup
  • 1.5 tsp peppermint extract

CHOCOLATE TOP

  • 100 g 70% Dark Chocolate

Instructions

BASE

  • Mix all ingredients together until it sticks together. (Add some almond milk or more nut butter if it's not holding together). Press into a  baking tray lined with baking paper and put into freezer while you make the filling.

PEPPERMINT FILLING

  • Mix all ingredients in a high speed blender until completely smooth. Pour evenly on top of base and return to freezer.

CHOCOLATE TOP

  • Use a double boiler method to melt the chocolate. Pour evenly over the top of the slice and return to freezer for 20minutes.
