Chocolate Beetroot Muffins
A delicious gluten, dairy and refined sugar free chocolate muffin that is the perfect fix to your chocolate cravings (without the sugar crash). The beetroot adds natural sweetness, antioxidants and a serve of veggies!

Ingredients
- 1 cup grated beetroot
- 1 cup almond meal⠀
- 3 eggs⠀
- 1 teaspoon vanilla extract⠀
- 3 tablespoons coconut flour⠀
- 1 teaspoon baking powder
- 1/4 cup cacao or cocoa⠀
- 2 tablespoons coconut oil ⠀
- 1/2 cup almond milk
- 3 TBS Honey, Maple Syrup, coconut sugar etc or your choice of unrefined sweetener
- 1/4 cup dark choc chips (dairy free)
Instructions
- Preheat oven to 180° C.
- Grate beetroot and add all ingredients to a bowl, stirring well to combine.
- Pour into lined muffin tin and bake for 20 minutes or until a toothpick comes out clean.
Notes
TIP: As soon as they're cool, wrap individually and freeze in airtight container.
