These Choc Chip Chickpea Cookies are so quick and easy to make, you can have them baked and ready to go in 15 minutes! 

Chickpea flour is a good alternative to almond meal if you need a nut free (and cheaper) option. If you sub the egg for a flax egg these are also daycare/school friendly!

Choc Chip Chickpea Cookies

Packed with protein and fibre, these are sweetened mainly with the choccy chips are a great for lunchboxes or an afternoon treat.

Servings: 10 cookies

Ingredients

  • 1 1/2 cups chickpea flour
  • 1/3 cup coconut oil
  • 2 TBS honey or your choice of natural sweetener
  • 1/3 cup chocolate chips
  • 1 tsp baking powder
  • 1 egg or flax egg* for egg free version
  • pinch of salt
  • *To make a flax egg mix 1 tablespoon of ground flaxseeds with 3 tablespoons of water and let sit for a few minutes until it forms a 'gel'.

Instructions

  • Preheat oven to 180°C and line a baking tray.
  • Combine all ingredients in a bowl until a dough forms, folding in chocolate chips last.
  • Roll into small balls and flatten with a spoon.
  • Bake for 10minutes or until edges are lightly golden. Cool on a wire rack.
