This is really easy to make and so so good for you. It’s got just the right amount of ginger to warm you up and will leave you with a full belly – definitely one to use over winter 👏⠀

**try and use chicken with the bones or even add a couple drumsticks in there esp if not using bone broth (and organic is best if you can).
Chicken and Vegetable Soup

Ingredients
- 4 Chicken Thighs or Breasts with bone in is best
- 1 onion diced
- 3 cloves of garlic minced
- 2 carrots
- 2 Potatoes
- 1 cup cauliflower
- 2 cups bone broth or stock + 4 cups water
- 1 tsp fresh grated ginger
- 2 stalks of celery
- ¼ cup parsley
- 1 TBS olive oil ghee or butter
Instructions
- In a large saucepan heat the olive oil/ghee, onion and garlic for a couple minutes.
- Finely chop vegetables and add all ingredients to saucepan, bring to the boil then turn on low and simmer 20-30mins or until veggies are tender & chicken is cooked.
- Remove chicken with tongs, remove bones and tear into pieces with a fork and place back in saucepan.
- Season and serve.
