Easy Chicken and Veggie Soup

A super nourishing, healing and delicious chicken soup to warm your belly and boost your immune system. My hubby Jake reckons this soup makes him have the deepest sleep!⠀

This is really easy to make and so so good for you. It’s got just the right amount of ginger to warm you up and will leave you with a full belly – definitely one to use over winter 👏⠀


**try and use chicken with the bones or even add a couple drumsticks in there esp if not using bone broth (and organic is best if you can).

Chicken and Vegetable Soup

  • 4 Chicken Thighs or Breasts (with bone in is best)
  • 1 onion diced
  • 3 cloves of garlic minced
  • 2 carrots
  • 2 Potatoes
  • 1 cup cauliflower
  • 2 cups bone broth or stock + 4 cups water
  • 1 tsp fresh grated ginger
  • 2 stalks of celery
  • ¼ cup parsley
  • 1 TBS olive oil (ghee or butter)
  1. In a large saucepan heat the olive oil/ghee, onion and garlic for a couple minutes.
  2. Finely chop vegetables and add all ingredients to saucepan, bring to the boil then turn on low and simmer 20-30mins or until veggies are tender & chicken is cooked.
  3. Remove chicken with tongs, remove bones and tear into pieces with a fork and place back in saucepan.
  4. Season and serve.
