Dairy Free Mango Coconut 'Nice' Creams
Healthy, only 5 ingredients and so quick to prep! This is a healthy dessert you can enjoy any time of the day and is a great option for the kiddies too.

Servings: 6 ice creams
Ingredients
- 400 ml can full fat coconut milk or cream
- 1-2 Tbs sweetener - maple syrup honey, stevia blend (start with 1 TBS)
- 1 tsp vanilla extract
- 1 Mango
Instructions
- In a blender mix coconut milk, sweetener and vanilla for 30seconds. Scoop out mango flesh and mash with a fork until it becomes a chunky puree then pour into ice cream moulds, scraping it up the sides.
- Pour coconut mixture on top, add paddle pop sticks / handles and freeze for at least 4 hours.
- Allow 5minutes to slightly thaw before eating.
