This amazing Gluten Free seed bread I have named the Super Seed Bread because unlike most overpriced GF breads that often lack nutrition, this one is bursting at the seams with good-for-you stuff. And completely budget friendly costing around $4-$5 a loaf! Super easy to make and delicious, this one is definitely one to try.
Gluten Free Super Seed Bread
This delicious bread is jam packed with antioxidants, b vitamins, protein, fibre and minerals like zinc, iron and magnesium (each slice is a meal in itself!). Amazing fresh from the oven or freeze for toast. Less than 5 minutes to mix ingredients together (after soaking your seeds) it’s as easy as it gets.
Ingredients
- 1 cup buckwheat
- 1.5 cup quinoa
- 1 tsp baking powder
- 1 tablespoon lemon juice
- 1/2 cup pumpkin seeds
- 1/3 cup hemp seeds
- 3 large eggs
- 1/2 cup water
- 2 TBS chia seeds
- 2 TBS Extra Virgin Olive Oil
- 1/4 tsp salt
Instructions
- Rinse and soak quinoa and buckwheat in water overnight or few hours then drain.
- Preheat oven to 160°.
- Pulse all ingredients together in a high speed blender.
- Pour into lined loaf tin, sprinkle with pumpkin seeds and bake for 30-40 minutes or until a toothpick comes out clean and bread is golden and springy.
- Let it cool before slicing.
