Banana and raspberry are a flavour match made in heaven and these muffins are a great source of protein, healthy fats and a natural energy boost. Perfect for a portable breakfast or afternoon snack. Freeze ahead to make them last the week (so you don’t eat them all in one hit!).
Banana Raspberry Muffins
1 bowl, super easy banana and raspberry muffing. Free from gluten, dairy and sugar, it’s also high in protein, fibre and complex carbs to keep you full and satisfied.
- 1 Large Banana (mashed)
- 3 eggs
- 1 tsp baking powder
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 2 cups almond meal (blanched)
- 1/4 cup shredded coconut
- 1/3 cup raspberries
- Preheat oven to 180
- Mix all ingredients except raspberries until combined.
- Stir through raspberries last.
- Pour into muffin tin and bake for 30-40minutes or until skewer comes out clean.
(may need to cover with tin foil halfway through if over browning)
