Banana Raspberry Muffins (Gluten, Dairy Free)

Another 1 bowl muffin recipe prepped in 5 then into the oven. Banana and raspberry are a flavour match made in heaven and these muffins are a great source of protein, healthy fats and a natural energy boost. Perfect for a portable breakfast or afternoon snack. Freeze ahead to make them last the week (so you don’t eat them all in one hit!).

Banana Raspberry Muffins

1 bowl, super easy banana and raspberry muffing. Free from gluten, dairy and sugar, it’s also high in protein, fibre and complex carbs to keep you full and satisfied. 

  • 1 Large Banana (mashed)
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 2 cups almond meal (blanched)
  • 1/4 cup shredded coconut
  • 1/3 cup raspberries
  1. Preheat oven to 180
  2. Mix all ingredients except raspberries until combined.
  3. Stir through raspberries last.
  4. Pour into muffin tin and bake for 30-40minutes or until skewer comes out clean.

(may need to cover with tin foil halfway through if over browning)
