An easy weeknight dinner thats doable even on the busiest days! Balsamic and Cherry Tomatoes are a match made in heaven
I love a one pan/dish meal for two reasons 1. So easy – 5 minutes prep, 2. Only one dish to clean up!
And actually this is my main tip for sticking to healthy eating – make it easy! Easy to prep and easy to clean up.
I guarantee you will start cooking more healthy foods if you follow this philosophy.
So here is a great midweek dinner. Whether you’ve just gotten home from work or witching hour is starting, throw this meal together in 5 minutes then let the oven do the work for you.
It also keeps really well for 2-3 days if you want to prep ahead for lunches. Enjoy!
One dish Balsamic Herbed Chicken with Cherry Tomatoes

Ingredients
- 2 Large Chicken Breasts
- 1 cup cherry tomatoes
- 2 tbs olive oil
- 2 tbs balsamic vinegar
- 1/2 tsp dried oregano
- ¼ teaspoon paprika
- 1 onion
- 4 cloves fresh garlic
- 1 Large Zucchini
Instructions
- Line a baking dish or lightly grease
- Preheat oven to 180 degrees Use blunt end of knife to crush garlic (can leave in its peel)
- Chop onion into wedges and roughly chop zucchini, add them both to the dish
- Slice chicken breasts in half (or use 4 smaller sized) and place on top of zucchini, garlic and onion and add cherry tomatoes.
- Top with oregano, paprika, balsamic vinegar and olive oil
- Stir to make sure everything is coated well
- Season with a little salt and pepper.
- Bake in oven for 25-30 minutes or until chicken is cooked. If you want to serve with brown rice or quinoa, start boiling that now (or if you meal prepped – it’s done!)
- Serve on top of leafy greens with quinoa or brown rice (optional).
