Dairy free hasselback potatoes recipe

This creamy (dairy and gluten free!) hassleback potato recipe is mega crowd pleaser!

It looks a little fancy but actually takes less than 10minutes to prep! 

A beautiful main with some steamed greens or baby spinach or as an easy side. 

So creamy and delicious nobody will ever know there’s not actually any cream or cheese in there! 

 

Dairy Free Creamy Hassleback Potato Bake

Delicious and creamy - without the dairy! All the flavour of your favourite potato bake and super quick and easy to prep. Have as a main or a side dish.
Servings: 4 Serves

Ingredients

  • 5-6 Potatoes
  • 400 grams Shortcut bacon diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • A few rosemary sprigs
  • 1/4 cup nutritional yeast
  • 270 ml can coconut milk
  • Broccoli or greens to serve with

Instructions

  • Preheat oven to 200°C and lightly grease a baking dish.
  • Peel and wash potatoes then slice in half, lengthways
  • Place 1 potato half, cut-side down, on a chopping board and cut thin slices in top of potato 1cm apart, being careful not to cut the whole way through potato. (You can slide a bamboo skewer through the bottom to prevent you cutting through).
  • Repeat with remaining potato halves and place flat side of potato in baking tray
  • Mix together coconut milk and dry herbs and pour over potatoes.
  • Sprinkle diced bacon, rosemary springs and nutritional yeast.
  • Cover with foil and bake for 40mins then uncover and bake another 30 mins until potato is golden (may need longer depending on size of your potatoes)
  • Serve with Leafy Greens or Steam a large head of Brocolli to serve with it.
