Crispy Drumsticks One Tray Bake

Ingredients
Marinade
- Juice of 1 large lemon
- 2-3 TBS Extra Virgin Olive Oil
- 2 TBS Tamari
- 1 tsp garlic powder
- 1 tsp ground paprika
- 1 tsp onion powder
Rest of Tray Bake Ingredients
- 10 Drumsticks
- 3-4 Large brown potatoes
- 100 g rocket or baby spinach
- 1 punnet cherry tomatoes
Instructions
Marinade
- Put all ingredients into a large ziplock bag with drumsticks, mix well and let marinate at least 3 hours (easy to do the night before or in the morning!)
- Preheat oven to 200C and line a rimmed baking tray.
- Chop your potatoes into quarters and assemble on the tray with the drumsticks. If you want your potatoes crispy, keep them separate to the drumsticks (one side each).
- Give the whole tray a sprinkle of salt then bake for 45-50 mins turning, halfway if desired.
- Skin on the drumsticks should be nice and crispy and potaotes a nice golden brown.
- Pour rocket/spinach and cherry tomatoes over the tray while it's still warm to slightly warm them.
- Serve straight away.
