Gluten and Dairy Free Coconut Passionfruit Bars

Next time you’ve got some delicious passionfruit to use up, these gluten, dairy and refined sugar free coconut passionfruit bars are highly recommended!

This is a super easy dessert you can whip together with ingredients you likely have in your pantry. 

Yummy, quick, easy and a healthy treat to keep in your freezer for dessert! 

 

 

Coconut Passionfruit Bars

A delicious, creamy and fresh dessert that is super easy to make.
Servings: 12 Bars/Slices

Ingredients

BASE

  • 1 cup almond meal
  • ½ cup desiccated coconut
  • 3 TBS coconut oil
  • 1 TBS honey

COCONUT FILLING

  • 400ml can coconut cream (good quality brand like Ayam)
  • 1 tsp vanilla
  • 2 TBS Honey or Stevia
  • 2 TBS coconut oil

TOP

  • 6 Passionfruit

Instructions

  • Make the base by mixing ingredients together with your hands until it sticks together. Press into a loaf pan lined with baking paper. Put in freezer.
  • Mix the coconut filling ingredients in a bowl until well combined. Pour on top of the base and return to freezer.
  • Empty passionfruit into a bowl and give a light stir. When coconut filling is slightly firm, pour passionfruit on top and return to freezer to set for 1 hour.
  • Store in the freezer and take out 10 minutes before serving
