Choc Chip Chickpea Cookies
Packed with protein and fibre, these are sweetened mainly with the choccy chips are a great for lunchboxes or an afternoon treat.

- 1 1/2 cups chickpea flour
- 1/3 cup coconut oil
- 2 TBS honey or your choice of natural sweetener
- 1/3 cup chocolate chips
- 1 tsp baking powder
- 1 egg or flax egg* for egg free version
- pinch of salt
- *To make a flax egg mix 1 tablespoon of ground flaxseeds with 3 tablespoons of water and let sit for a few minutes until it forms a 'gel'.
Preheat oven to 180°C and line a baking tray.
Combine all ingredients in a bowl until a dough forms, folding in chocolate chips last.
Roll into small balls and flatten with a spoon.
Bake for 10minutes or until edges are lightly golden. Cool on a wire rack.
