The perfect comfort food that actually makes you feel better pretty much straight away, I swear it does! Full of immune boosting nutrients, easily absorbed by the body.
Whenever I get even the inkling I’m getting sick, I immediately start whipping up this immune tonic soup. Soups are perfect for your body when you’re unwell because they are easily digested so the body can readily soak up all the nutrients nice and quickly without having to using too much energy on digestion.
And because the nutrients are in an easily absorbable form, you get the feel-good effects pretty soon after eating it. This soup is rich in anti-inflammatory herbs and nutrients and is literally the next best thing to a vitamin and mineral injection.
Look for a high quality bone or veggie broth you can add to the base (you can find in health food stores or some supermarkets) or even just add a couple of organic chicken legs for an extra boost of immune loving nutrients. Buy organic if you can for the most nutrient dense soup.
Immune Tonic Soup
Ingredients
- 1 tablespoon olive oil
- 1 onion
- 1 zucchini
- 3 cups spinach
- 1 cup of broccoli
- 3 cups of pumpkin
- 1 large potato
- 1 cup frozen peas
- 3-6 cloves garlic minced
- 500 ml High quality broth or stick a few organic chicken drumsticks in there with skin on.
- 1.5 litre of water
- 2 tsp turmeric
- 1 tbs ground ginger
- 1 bunch of parsley
Instructions
- Roughly chop all vegetables.
- In the bottom of your saucepan (medium-large) lightly cook the garlic and onion in olive oil for a few minutes.
- Add all other ingredients and liquid.
- Bring to the boil then turn on low and simmer for at least 20minutes. The vegetables will soften into a mush and don’t require blending unless you like it super smooth.
