Easy Dinner Chicken Tikka 2 Ways

1 TRAY, SLOW COOKER DINNER //

For a delicious dinner that’s quick and easy to prep, you can’t go past this Chicken Tikka Masala!

You can make it as a one tray bake or in the slow cooker. Either way it’s delicious and takes around 5minutes to throw it all together! 

Serve with some rice on the side, with salad leaves or on a wrap.

Tip: it makes a delicious 2 minute salad the next day – just mix with some baby spinach or leafy greens.

One tray bake Chicken Tikka Masala

There's no easier way to make a curry then chucking it all in the one dish! Enjoy this delicious chicken tikka with a side of rice and or a bowl of greens for a mild dish the whole family will love. Gluten and Dairy Free.

Servings: 4 SERVES

Ingredients

  • 400-500 g Chicken Breast
  • 1/3 Cup Chicken Tikka Masala Paste
  • 1 Brown Onion Diced
  • 2 Large Carrots
  • 1 Sweet Potato
  • 1 Can tinned tomatoes
  • 1 400 ml Can coconut milk
  • Fresh Coriander to Serve

Instructions

  • Preheat oven to 200C
  • Dice veggies and chicken and add to a lightly greased baking dish. Stir through all ingredients until well combined.
  • Cover with foil and bake for 50minutes or until veggies are softened (cut them into small chunks so they cook faster).
  • If you're having rice, put on to cook at least 20minutes before serving.

Notes

Use any veggies you've got in the fridge!

Slow Cooker Chicken Tikka Masala

A healthy and easy slow cooker curry that the whole family will love!
Servings: 4

Ingredients

  • 600 g Chicken thigh or breast
  • 2 x 400g cans crushed tomatoes
  • 1/2 cup tikka masala paste
  • 1 cup coconut cream
  • 2 Carrots
  • 1 Medium Sweet Potato
  • 1/4 tsp ground ginger
  • 1/2 tsp garlic powder
  • 2 brown onions diced

Instructions

  • Chop chicken, carrots and sweet potato into small peices and dice the onions.
  • Add all ingredients to a slow cooker, mix well to combine and cook on low for 8hrs (or longer).
