The dough only requires 2 ingredients and the dough itself is dairy free (though we are using goats cheese in this one, so omit if you need a dairy free option).
We don’t have a lot of cheese dishes but if we do, I always use goats cheese in place of cow cheese as Goats cheese/milk products are easier to digest than cow milk.
The casein protein in goats milk is not inflammatory like cows milk so if your avoiding dairy because of skin or digestive issues, you might find you are ok on goats cheese.
*It does still contain lactose.
Gluten Free Mini Pizza Scrolls
The perfect lunch box snack with only 2 ingredients for the dough! These are also egg, yeast and nut free. Delicious for both the littles and big people!

Servings: 12 scrolls
Ingredients
GF DF Dough
- 1 cup coconut DF or greek yoghurt
- 1 1/2 cups gluten free self raising flour
Filling
- 2 TBS tomato paste or pizza sauce
- 1 TBS Italian Mixed Herbs
- 1/4 Cup Grated Goats Cheese omit for DF
- 1/4 cup spinach
Other Filling Suggestions
- Ham + pineapple dairy free opt
- Cooked shredded chicken breast + pesto dairy free opt
Instructions
- Pre-heat oven to 180C and line a baking tray with baking paper.
- Mix flour and yoghurt together, adding extra flour if needed until a dough forms. Knead for a couple of minutes then place on baking paper and roll out into a rectangle shape about 1 inch thick.
- Spread pizza sauce or tomato paste (mix with a tsp of water to thin) and top with fillings.
- Roll into a long sausage shape (long end) and cut into individual scrolls.
- Place on baking tray, press down a little and top with extra sauce and cheese.
- Bake for 15 minutes or until slightly golden.
