This recipe is a gamechanger and one of my must have for postpartum mums because it is so easy. The creamiest rice you’ve ever tasted, cooked in the oven! One dish to clean, 5 minutes to prep.
Add whatever veggies you like! (Just cut them small so they cook in time)
It’s dairy free, gluten free and is a recipe that needs to be saved, shared and repeated! I’ve been making this for years, it never gets old.

Oven Baked Chicken and Creamy Rice

Ingredients
- 1 1/4 cup of water
- 400 ml can coconut milk
- 3/4 cup white rice
- 1/4 tsp Paprika
- 2 tsp Garlic powder
- 1 tsp ground cumin
- 4 Chicken Breasts
- Coriander or parsley to garnish optional
Chicken Spice Rub
- 1/2 tsp ground paprika
- 1/2 tsp garlic powder
- 1 tsp cumin
- olive oil
Instructions
- Preheat oven to 200C and lightly grease a baking dish
- Add rice, coconut milk, water, 1/4 tsp paprika and 2 tsp garlic powder to baking dish, stirring well to combine.
- Lightly coat chicken with olive oil and rub with 1/2 tsp each of paprika, garlic and 1 tsp of cumin.
- Place chicken on top of rice, cover dish with foil and bake for 45minutes. Remove foil and bake another 5-10 if it looks really liquidy. Remove from oven and let stand for 5minutes then stir the rice before serving.
