15 Minute Healthy Butter Chicken

A family favourite just got an upgrade! Super quick and easy and packed full of nutrients, this dairy free take on Butter Chicken is a great healthy alternative. If you can tolerate Ghee (lactose free, clarified butter), you’ll get an extra ‘buttery’ type flavour plus the anti-inflammatory healing benefits!

Ingredients

  • 1/3 cup Butter Chicken Paste
  • 1 onion
  • 1 tsp minced garlic
  • 1/4 tsp ground ginger
  • 1 400 ml tin tomatoes
  • 1 cup full fat coconut milk or cream
  • 1 cup sweet potato diced
  • 1 cup cauliflower cut into small pieces
  • 150-200 ml water will need 200ml if using non stick cookware
  • 1 cup basmati or jasmine rice
  • Leafy Greens
  • 1-2 TBS Ghee (optional see notes)
  • 2 large chicken breasts (400-600g)

Instructions

  • Wash rice and put in saucepan with water to start cooking.
  • Dice onion and cook with a touch of olive oil until softened. Add garlic, ginger and curry paste and 50ml of water stirring for a couple of minutes.
  • Add chicken rest of water, stir until cooked then add tomatoes, veggies and coconut milk.
  • Cover and simmer until vegetables are soft (about 5 minutes). Serve with rice and a few leafy greens.
  • Optional: add 1 TBS of ghee, stir through before serving. See note below

Notes

*Ghee is clarified butter - it is lactose free but not dairy free. It is full of many anti-inflammatory and healing nutrients so if well tolerated, a great superfood to include in your cooking.
Cooking time: You can make this earlier and let simmer on low.
