If you haven’t pre-made your rice it’s still easy to make, you’ll just have to make and cool your rice first.
Cold Rice Summer Salad

Ingredients
- 1 corn cob or can⠀
- 1 cup cherry tomatoes or regular⠀
- 1 bunch coriander or parsley if you don’t like⠀
- 1 can 4 mix beans⠀
- 1 apple⠀
- 1 medium cucumber⠀
- 1/4 cup celery 1-2 stalks⠀
- 1 tsp of each – onion powder garlic powder, ground cumin.⠀
- 2 cups cooked brown rice or could use quinoa⠀
- 2 Tablespoons Olive Oil⠀
- Juice of 1 Lemon⠀
- Season with salt or add 1-2 tsp of Tamari. ⠀
Instructions
- Mix all together! Store in airtight container 3-4 days. ⠀
