Roasted Veg and Honey Macadamia Seed Salad
The tastiest salad that will have everyone asking for more! Perfect as a side dish or as a tasty lunch.

Ingredients
- 1 medium white potato
- 1 small sweet potato
- 1 tsp coconut oil to coat potaotes
- 1 tsp flaxseed oil
- squeeze of lemon
- 2-4 cups mixed greens (kale spinach etc)
Macadamia and Seed Mix
- 1/4 cup macadamias
- 1 TBS sunflower seeds
- 2 tsp honey
- 1 tsp coconut oil
Instructions
- Preheat oven to 190 C
- Chop potatoes into small cubes, coat with coconut oil and bake for 20mins (depending on size)
- While they’re baking heat a pan to medium heat and add coconut oil, 1tsp honey and coat macadamias and seeds. Stir for a couple minutes until nuts are lightly toasted.
- Put mixed leaves in a bowl, dress with lemon and flaxseed oil. Mix in potatoes and nuts.
