Sometimes Gluten AND dairy free dinners can taste a little too healthy. This frittata will surprise you and your tastebuds and is a great family friendly, quick midweek dinner that takes 5minutes prep.
Just put all the ingredients straight into the one dish so you have minimal clean up and let it bake away while you wind down for the night (or at least try and deal with witching hour…)
A great meal to meal prep at the start of the week for a couple days worth of breakfast or lunches ready to go.
Vegetable ‘anything goes’ Frittata
Whatever veggies you have in the fridge, throw them in a frittata! It's a great way to salvage unused veggies while creating an incredibly nourishing (and easy!) meal.

Ingredients
- 1 cup sweet potato or pumpkin chopped into small cubes
- 1 cup spinach
- 1 onion diced
- 2 tablespoons dried italian mixed herbs
- 1 small zucchini chopped
- 8- 10 eggs
- 2 TBS nutritional yeast (dairy free) or goats cheese (dairy)
Instructions
- Pre-heat oven to 180°
- Mix all ingredients in a bowl (or pour straight into the baking dish!)
- Pour into a lined or greased rectangular dish.
- Bake for 40 minutes or until cooked.
