Sweet Potato and Feta Frittata
A quick, easy and portable dish for any time of day! serve with a small side salad and you've got a healthy and filling dish to go.
Ingredients
- 10 eggs
- 1 onion diced
- 1 TBS dried mixed herbs
- 2 cups sweet potato
- 2 cups of spinach
- 50 g goats cheese/ organic feta
Or Dairy Free Option
- 1/4 cup nutritional yeast
Instructions
- Preheat oven to 180°C
- Cut veggies into small pieces and add all ingredients to a lightly greased baking dish, whisking until combined.
- Bake in the oven for 40-50 minutes or until firm and cook
Notes
Serve with a fresh salad of leafy greens, tomatoes, avocado slices and lemon juice.
Store in an airtight container in fridge for 3 days or freeze.
