We nearly demolished these before I could even take a pic they were that good! GF Coconut Crumbed Turkey strips with quinoa (to make it a meal) and you’re definitely going to want to try the dressing/dip with it.
Very Easy to make and could easily sub the turkey breast for chicken (I just wanted to try something different ☺️)
Coconut Crumbed Turkey with Quinoa Salad

Ingredients
- 3/4 cup desiccated coconut
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 3 TBS coconut flour + 2 eggs
- 400 g Turkey Breast
- 1 cup dry quinoa
- 2 tsp tamari
- Fresh Lettuce Leaf
Dressing/Dip
- 1/4 cup whole egg mayo GF DF
- 1 tsp dijon mustard
- 1 tsp honey or maple syrup
- 1-2 tbs water
Instructions
- Preheat oven to 180°C and set up a tray with a wire rack on top.
- In one bowl whisk eggs with coconut flour and in another bowl mix coconut, garlic and paprika. Slice turkey breast into strips.
- Dip turkey in egg and coconut mix first then coat in coconut mix and add to wire rack. Bake in oven for approx 20minutes until golden.
- Meanwhile wash and put quinoa on to cook. Once cooked stir through tamari. Mix Dressing in a small bowl and layer quinoa, salad, turkey and dressing on top of a lettuce leaf. (you can roll up like a wrap)
